A carefully crafted soy sauce, made using traditional methods and essential to Zenbo cuisine.
Tatsuno City in Hyogo Prefecture is known as the "hometown of light soy sauce."
Blessed with the mild climate unique to the Seto Inland Sea, the Ibo River, which flows through the center of the city, is famous as a clear stream where many sweetfish swim upstream in the summer. Its underflow water is "soft water," which is ideally suited for soy sauce brewing. "Usukuchi shoyu" (light soy sauce) made with this water has become indispensable to Japanese cuisine, as it preserves the vibrant colors of the ingredients.
Founded here in 1879.
At Suehiro Shoyu, we express our gratitude for nature's bounty by crafting soy sauce using traditional methods that make the most of this "water," utilizing domestic soybeans and wheat.
“Tatsuno Usu-murasaki” is a soy sauce that pursues the ultimate balance between the mission of "light soy sauce"—to bring out the natural flavors of ingredients—and the deliciousness of the soy sauce itself. By using rice koji, which has been passed down at Suehiro Shoyu for generations, a mellow sweetness is created, bringing out the deliciousness of all kinds of dishes, whether used as a drizzling or dipping sauce.
Even in Zenbo cuisine, which emphasizes the natural flavor of ingredients, this soy sauce is an essential element for simmered dishes, blanched vegetables (ohitashi), and more.
It also makes a great gift when paired with Tatsuno Koi-murasaki.
